OH SUMMERTIME, I’M READY FOR YOU!
These are one of my favorite summertime cookies! One of my friends brought these cookies to work several years ago and I remember thinking “cornmeal in a cookie, yuck”! Much to my surprise they were delicious! I have tweaked her recipe a bit to make them a little more “limey”. You can also make the batter up ahead of time, roll into your 1″ balls and freeze, just take a few out and bake at a time, otherwise if you are anything like me, you may devour them all… 😊 I’m sitting here at my keyboard now, with a cup of hot tea on this foggy cold morning. Dreaming of a warm summer evening, sitting outside with a couple cookies and a frosty margarita! Who wants to join me?
CORNMEAL LIME COOKIES
Ingredients
- 1 1/2 cups 340g butter
- 1 1/2 cups 301.5g sugar
- 2 eggs
- 3 cups 384g flour
- 1 cup 172g cornmeal
- 1/2 tsp. salt
- 2 tsp. vanilla
- 3 limes
- YL Lime Vitality oil
- 1 egg white
- powdered sugar about 1-1 1/2 pounds
Instructions
- Melt butter, add sugar and eggs and mix till well blended. Add flour, cornmeal, baking powder, salt, vanilla and 1-2 drops of the YL lime vitality oil; mix well. Grate finely, 3 limes. Add 1/2 of the grated lime zest to dough and mix, chill in the refrigerator for a few hours.
- Form the dough into 1″ balls then press flat onto a cookie sheet, bake at 375° for 12-15 minutes or until light brown on the edges. Turn pan half way through baking time.
- You can make bar cookies if you prefer by pressing all the dough into a 13″x9″ pan.
- For the frosting, squeeze the juice from the 3 limes. Combine with 1 egg white and 1 drop of YL lime vitality oil, add the remaining lime zest. Add enough powdered sugar to make a heavy glaze. Drizzle or spread the icing onto the cooled cookies and let cool completely.
